Aureole Las Vegas

Aureole Las Vegas, one of the earliest arrivals on the city’s fine dining scene, enjoys a prime location within the Mandalay Bay Resort. Under dramatic golden lighting, including ceiling to floor window views of Swan Court, and graced by towering floral arrangements, Aureole Las Vegas is divided into five central dining rooms, each with its own distinct personality, including the richly colored burgundy and gold “Main Room,” and the “Lounge,” an intimate cigar and wine bar featuring leather upholstered wall panels. The dazzling menu from Executive Chef Vincent Pouessel, a native of Brittany who formerly worked at the Michelin-starred Le Jules Verne restaurant located inside the one and only Eiffel Tower, combines Charlie Palmer’s classic Progressive American cuisine with the theatricality of Las Vegas in dishes like Signature French Onion Soup with foie gras, truffles, gruyere and puff pastry. Perhaps most famously known for its four-story wine tower and flying wine angels, Aureole Las Vegas is a boldly original show stopping experience.
